Spicy Moroccan Fish & Quinoa

When I saw the brilliant response to my tuna and sweet potato fish cakes recipe I decided I had better start blogging recipes more often. 

I'd spent a night recently going through Jamie Oliver's Ministry of Food book and marking recipes that looked like something I could take on. 

One of the first was this spicy Moroccan fish with couscous (I promise this is as easy as the fish cakes!)


I've changed some of the ingredients slightly because 1. I'm not a huge fan of couscous and 2. I forgot to buy prawns but feel free to include those if you wish! 

To do it the same as me and to make enough for 3 people, you'll need:
- 2 cloves of garlic 
- 1 fresh chilli
- A handful of basil
- Half a teaspoon of ground cinnamon
- 1 teaspoon of cumin seeds
- 350g white fish (however, if you want to add prawns... use 150g of white fish and 200g of prawns)
- 1 can of tinned tomatoes
- 2 handfuls of frozen peas
- 1 lemon
- Salt and pepper
- Enough quinoa to feed 3 people

How to do it:
- Finely chop your garlic and chilli.
- Pick the leaves off the stalks of the basil and leave some of the smaller ones to the side to make the dish look pretty when it's all finished. 
-Chop up the larger basil leaves.


- Heat a pan on the hob with a glug (technical term) of olive oil and throw in your garlic, chilli, chopped basil leaves, cinnamon and cumin seeds. 
- Stir them around in the pan for a couple of minutes.


- Add your fish (and prawns if you have them) on top.


- Pour over your chopped tomatoes and peas.
- I also added a splash of water to the pan because I didn't think it was 'saucy' enough.


- Cut your lemon in half and squeeze over the juice of both halves.



- Season it with salt and pepper, bring to the boil, cover and let it cook away for 10 minutes.
- While that's happening, put your quinoa in a bowl with enough water to cover it and put in the microwave for 10 minutes. 



- Serve it up, sprinkle over the smaller basil leaves you'd set aside and that's it!
